How to Make Green Curry Paste | Erwan Heussaff

Making authentic green curry paste takes quite a few ingredients you may be unfamiliar with, but with one trip to your Asian grocer and a few minutes of your time, you can have a batch of amazing curry paste that is busting with flavor and will last across several meals.

1/2 teaspoon peppercorns
1 ½ tablespoon peeled and minced ginger
1 1/2 tablespoons galangal
10-15 Green Thai Chilies
1 tablespoon cilantro
1 handful of sliced cilantro roots
2 Kaffir Lime leaves finely sliced
1/4 cup garlic finely minced
1/2 cup sliced shallots
1/4 cup Chili Leaf
3-4 tablespoons sliced lemongrass, thinly sliced
1/2 tbsp cumin
1 tablespoon fish sauce
1 teaspoon shrimp paste
1-2 tablespoons peanut oil

Mortar and Pestle all ingredients to a paste. You can also use a food processor.

  1. Nice recipe, the closest to authentic recipes I've ever seen on YouTube. I've learned that kaffir lime zest is essential to any Thai curry paste so you should put kaffir lime zest in if you can get a hold of it.
